Cold leftover rice is essential. High heat, quick work. Done in fifteen minutes.

Dinner Frittata
A large frittata — mostly vegetables, just enough egg to hold it together — started on the stovetop and finished in the oven. Served in wedges.

The ratio should tilt heavily toward filling. A cast iron pan into 375°F for ten minutes. Cut at the table.

Crumpets with Egg and Cheese
Homemade crumpets toasted until the edges are crisp, with a fried egg and melted sharp cheese. The spongy interior soaks up the yolk and butter. Honest comfort.

If making from scratch: thin yeasted batter in metal rings on a dry griddle. The bubbles rise and set — that's the pocked surface. Make a batch on Sunday and they keep all week.

Have the coconut milk open and ready. The moment the paste smells fragrant, pour it in.
